Cap & Cane Spirits is a collection of small batch rums distilled and bottled at our distillery in Durham.  Each bottle tells a story of two great companions, curiosity and adventure. The journey of our rums start in Latin American and the Caribbean, where sugar cane is cultivated to be transformed into the rum’s heart and soul.  Once in North Carolina, it is then carefully transformed into rum through double pot distillation in our two copper pot stills.

CAP & CANE

White Rum

Our white rum is made primarily of the highest-grade fancy molasses available, produced from pure sugarcane juice which is condensed, inverted and purified.

The molasses is blended with evaporated cane juice, then double batch distilled in our two copper pot stills only to 80% abv or 160 proof to retain the sweet, delicious expressiveness of the molasses and cane juice. The result is a product of true passion, with round flavors full of caramel, vanilla and tropical fruit.

Lingering Caramel & Tropical Fruit

  • Guatemalan Fancy Grade Molasses and Evaporated Cane Juice fermented using 3 different yeast strains.

  • Double batch copper pot distillation starting with low wines distillation on a 500 gallon Kothe still then transferred for spirits run for distillation up to 80% on a 250 gallon Vendome.

  • Light, high micron filtration to brighten the spirit.

  • 40% Alcohol by Volume, 80 Proof

Golden Rum

Fancy grade molasses is both double copper pot batch distilled and column distilled, aged in Bourbon and Rye Whiskey barrels, then both styles are married to create the best flavor expression.

Soft, Caramel and Banana Notes, Lingering Sweet Whiskey Finish

  • Louisiana, Guatemalan Francy Grade Molasses, and Evaporated Cane Juice fermented using 3 different yeast strains.

  • Aged for 1.5 years in used Rye Whiskey and Bourbon Barrels.

Coffee Rum

A balanced blend of fancy grade molasses and evaporated cane juice is gently double batch distilled in our two copper pot stills, then married with cold brew coffee, Madagascar and Tahitian vanilla, cocoa nibs and a touch of Carolina Reaper pepper.

Lingering Espresso Coffee Finish, Rich Toasted Sugar

  • Louisiana, Guatemalan Francy Grade Molasses, and Evaporated Cane Juice fermented using 3 different yeast strains.

  • Our white rum is blended with Counter Culture Cold Brew Coffee, along with a maceration of Madagascar and Tahitian Vanilla beans, cacao nibs, and a touch of Carolina Reaper pepper.

Spiced Rum

A balanced blend of fancy grade molasses and evaporated cane juice is gently double batch distilled in our two copper pot stills, then infused with a proprietary Chai Tea and rested on Amburana oak.
